Cranberry Salad
If you like it perky, this one's for you. Crunchy and smooth; sweet and tart. How can that disappoint? And it tastes good, never mind all the benefits you get from it.
Christmas Cranberry Salad
2 cups cranberries
1 whole orange (include rind)
1/4 cup walnuts
1 whole apple
2 packages (3 oz each) red jello (any flavor - strawberry, raspberry, cherry, cranberry, etc.)
2 cups boiling water
1/2 cup sugar
Process cranberries and orange slices (including the rind!) in food processor. Add walnuts to mixture. Dice (smaller than bite-size), but do not peel, the apple and stir in. In square dish, dissolve 2 packages of red jello in the boiling water; add the sugar. Stir in the cranberry mixture and refrigerate until set. 8-12 servings.

Yum! I, too, love cranberries...here's my fave recipe that includes DRIED cranberries!
Roast butternut squash coated in olive oil in one pan.
Roast onions coated in olive oil in another pan.
When each is done, combine into a serving bowl, add dried cranberries, chopped fresh sage, salt to taste and serve.
It's DEEEElicious!
